About the Purine–Gout Index

What this is

A searchable, evidence-based catalog of foods and supplements showing purine content and the four bases that form uric acid (adenine, guanine, hypoxanthine, xanthine). It’s designed to help people and clinicians make practical choices for gout and hyperuricemia.

Data sources
  • USDA/ODS Purine Database, Release 2 (2025): new U.S. analytical data plus curated literature from multiple countries and decades, standardized to mg/100 g or mg/100 mL.
  • International literature: peer-reviewed studies with method notes (mostly HPLC). See References.
How to interpret values
  • Numbers vary across sources due to species, processing, cooking, and methods. Treat ranges and categories as guides.
  • Base mix matters: hypoxanthine and adenine tend to drive urate more than guanine/xanthine.
  • Cooking can concentrate mg/100 g by water loss; consider serving sizes.
